Chess pie has been around for centuries. I decided to be creative and change it up a bit. Every bit of the rich silky filling has a tangy lemon kick that is perfectly balanced by the buttery, flaky crust, making a simple, but perfect pie.

One source suggests that chess pie was named due to a non Southerner hearing inquiring about a remarkably delicious pie. The cook, with a very thick drawl said, “it’s just pie.” This was heard as “chess pie.” Regardless of the origin of the title, Kathy’s lemon chess pie is truly remarkable, a marvelous mixture of sweetness and lemon tang.
