When my husband says this Lovers Coconut Cake is the best he has ever eaten, you can believe his word. Most, holds together when cut into slices. A cake we could not stop eating ..... Guess I will need to buy 2 coconut cakes next time around. Kathy's bakers kitchen is the greatest for all baked goodies.
It was wonderful! Not too much frosting.
We took this cake to my father-in-law for Father's day. It was the absolute awesome end to a great meal. He and I both risked our lives for a second piece of cake, since we're both diabetics! The cake was absolutely moist and unbelievably tasty!!!! Thanks, Kathy, for another masterpiece. Kathy, thank you for a wonderful Coconut Cake!!! This may be the last Father's Day cake I can share with my father-in-law, considering he's 89 years old. However, he was the "King for Day" and wrangled for a second piece of cake! He specifically asked, "Give me a BIG slice this time." LOL!!!! Thank you, Kathy, for another gourmet desert!!!!
